Scientific publication on modelling oleogel microstructure

Understanding is the gate for development, and simulations and mathematical models are a great tool to speed up understanding.

We applied these two important concepts to oleogels and developed a digital twin which gives us the flexibility to run virtual experiments and understand the rheological behavior of these lipid-based materials. In our latest publication titled “Micromechanical finite element modeling of crystalline lipid-based materials: monoglyceride-based oleogels and their composites” (Materials Horizons, 2025, Advanced Article), authored by Perfat’s research team of Dr. Patrick Grahn, M.Sc. Petri Lassila, and Dr. Fabio Valoppi, we show for the first time that the mechanical properties of oleogels and their composites can be mathematically calculated by performing 3D mechanistic modeling on the exact microstructure obtained by non-destructive imaging.

Imagine how fast we can now develop new lipid-based materials thanks to this tool!

We look forward to presenting Perfat Technologies at FFT in San Francisco next week. Please pass by our booth to hear (and taste) more!

We will be participating at the MISTA symposium in San Francisco on March 12. We look forward to good discussions and networking with our food industry peers.
